considering you do not identify yourself as being particularly great at bullet hells/danmakus:

-touhou 10 is pretty much the easiest in the series, and introduces many systems which are often present in modern releases;

-touhou 8 is pretty accessible in terms of difficulty, and is generally believed to be the best/one of the best in the entire series;

-touhou 17 is a pretty easy modern game feat. achievements

all touhous after 9 are available on steam, the rest are abandonware so if you cant easily get them physically it should be fine to pirate them
