Maybe if you were to boycott buying YouTube Premium or something but I don't really think a handful or even a couple hundred or thousand people not watching anything on YouTube would do literally anything to affect them (I can't imagine the scale is that wide, I'm ready to accept I am wrong since this is probably being organized on a site I just don't use. But this is the first time I'm hearing of it)

the biggest videos on that platform have billions of views, the biggest channels hundreds of millions of subscribers, this would have to be an absolutely huge movement
