I scrolled through a couple pages to see if anyones started one already and i didn't see any so here we go: post your favorite EASY recipes!!! But it MUST be something YOU make at least semi-regularly. I wanna see PICS. I'm putting my cookie photo and recipe in the comments because I'm SO fucking nice and conscientious.
I'll go first:
I made these oatmeal-raisin-chocolate-chip cookies and they're freaking awesome. There are a billion ways to make base cookie dough so I'm not gonna bother (also I usually just buy a tube of premade dough w chocolate chips because i cannot be trusted with a loose bag of chips) with all that but you basically just add as much oatmeal as you want as many raisins you want and then sprinkle some cinnamon, brown sugar, (and a little bit of) salt in and mash it all together till theyre evenly distributed. put in the oven at like 370 for 15-25 minutes till the edges are golden brown then let them sit for a minute or two.
Here is a Simple recipe for brownies with cookie butter icing.
Ingredients
Brownie Mix
2 Eggs
1/2 Cup of water
1/4 Cup of vegetable oil (Butter can be used as well but it makes them dry IMO)
Cookie Butter (its like peanut butter but with Biscoff Cookies)
1. Pour the Brownie Mix, Eggs, Water, and Oil into a mixing bowl and mix thoroughly until there's no more powdery brownie mix. Once you've mixed it, you can tell its perfect if there are multiple small bubbles in the brownie mix.
2. Get the Cookie Butter jar and Add 4 Tablespoons of it into the mixture and fold it in. Folding it in means taking the spoon or baking spatula you are using to mix, and lifting the batter with it over and over again in a circular motion. Like this:
3. Pour your Brownie Mix into a pan, personally I like using a muffin tin because then you can make individual brownies that way without having to cut them later. Spray your brownie pan of choice with a nonstick baking spray. Once that is done, take a spoon and the Cookie Butter jar and place a large dollop of the cookie butter in the individual brownies centers.
4. Set the Oven to 350 Degrees for 25 minutes and then carefully place the Brownies into the Oven. once the Oven beeps, use a toothpick to test if the Brownie mixture has actually baked in the center. If it hasn't, place it back in for about 5 minutes and take it out again.
5. Let the brownies cool off. Next, you will take any remaining cookie butter and place it in a microwavable safe bowl. You will microwave it until it is soft and pourable, then you can drizzle or pour it over your brownies to your liking.
And Bam you have Cookie Butter brownies! I would send a photo of the ones I made but my family literally devoured all of them lol.

i have a chocolate chip cookie recipe that i altered and altered over the years until i landed on something that i really loved. i FORGOT to mention on the recipe though that i bake these on the CENTER-TOP rack and that if you bake them LOWER. they will get kinda crispy and flat. but thats some peoples thing!! i like them very slightly underbaked so theyre super soft and very precarious to dip into milk.

ive always been kinda afraid of teaching myself to cook so having so many beginner recipes in one spot is like. genuinely really great. its not so hard when i just give it a try, even if its a boxed mix of something.

blackberry compote ingredients: - enough blackberries to fill a saucepan - one cup of sugar (more or less to taste) after picking or otherwise obtaining a holy heckton of blackberries (yes, I know blackberry season has practically ended by the time I've written this, but it'll be back next year), wash them all in a colander, VERY GENTLY. these are berries and they can get squished easily if you don't watch out and they will get washed away in this stage if you're not careful. that being said, you can still jostle the colander to shuffle the berries around for easier access to stems and stuff that may have ended up in there. remove those, you do not want to have a cronchy stem in your sauce. after this step, transfer the berries to your saucepan. make sure it's bigger than you think you might need. that small one you used to make a brick of stovetop ramen in is probably too small for this. also, mind the berry juice stains. after that, set the stovetop to like, medium high or something. this is the part where you need to add the sugar. I'm not really into making super sweet stuff, so I usually only limit to one cup of sugar. I find limiting the sugar brings out the natural flavor a lot better. let it sit for a while, probably with the lid on. check it every few minutes. you can probably stir it after a while. after a bit, you can probably turn it down to medium low heat. additional items for flavor: I've found that adding one (1) fresh mint leaf is enough to add intrigue to the flavor. you only need one. it doesn't even have to be very big. you could have a tiny mint leaf and it'll be just fine. if you know any friends that desperately need to get some wildly growing mint off their hands, take them up on the offer, but I'd suggest using most of it on a tea. can you use a dry mint leaf? probably? just make sure it has time to soften up in the saucepan with the rest of the compote. I've only tried this for cranberry sauce, but I think adding some amount of citrus might make a blackberry compote pop. lemon? lime? orange? something that looks like an orange but isn't actually an orange? experiment! juice or zest? whichever one you have access to. if you can get some fresh citrus peel to grate with one of those fine grain graters for the zest, go for it! after a while, once the consistency is to your liking, you can transfer it to glass jars. do note, this sauce WILL stain your plasticware. it will stain everything you don't clean. it will stain your carpet, your face, and your favorite shirt. but you can just drink it and it will be delicious. you can pour it on pancakes and waffles and feel a little fancy. you can add some to a drink and look cool. more importantly, you can gift this stuff to your friends and family! just make sure you look up proper canning techniques so they don't get botulism or something. or not, I'm not you parent.

Oh I fucking love baking. Unfortunately the only recipe I have are ones from cookbooks (making my own recipe scares me). If youre reading this I recc Enderslimes cookie recipe, I made them before and they were delicious! I found it easy to make, but Ive been a on and off baker for the past handful of years

there's a bunch of other stuff i usually make to go along with it. i will make this salsa verde recipe included with the recipe, and then almost always pickled red onions & jalapenos and occasionally guacamole. if you don't wanna do all that you don't have to, i get it. but the carnitas have definitely got the lowest effort to the highest yield of flavor in any dish i've ever made. like they're SOOOO FUCKING GOOOOOD AUGHHHH... i'm getting hungry just thinking about them. typically i'm using a big ass pork shoulder for this, so i have food for days + enough to feed my friends, but if you can't eat that much, there's enough fat in the dish that it freezes really well.
basically all of the active time (like ~30 minutes once you get good at it) is in the prep; cutting up the meat is the most laborious part of the process. after that, though, it's just sticking all of the meat into a 9x13 dish with a bunch of the aromatics and letting it cook for a few hours. i cannot recommend these enough, literally one of the best fucking things i've eaten every single time i make them. you can use the cooked carnitas as a protein for all kinds of things, i've done tacos, quesadillas, rice bowls... you could probably even make like a bbq-y sandwich with them it'd be pretty good.
ok i know i said you don't HAVE to make all that other stuff, but you should make the salsa verde to go with it. so so so good, i made this for a friends b-day party one time and one of my friends was like raving about the salsa. it's so good, so easy. i think the recipe says to boil the tomatillos but i always broil them in the oven and get a really nice charred flavor. here's a video where kenji cooks it that way, this is how i learned to make them.
